As you can see the Palm Civet eats and partially digests the coffee bean (only the ripest will do, this is partly why the coffee tastes so good – in theory). After around a day or so, they then, shall we say eject them from their system sometime later, where locals collect them and process them (clean, dry etc).

Wondering the other reason Kopi Coffee tastes so good? Well, within the Civet’s stomach a femernetation process takes place and this really affects the taste of the bean.

It is the drawn out process and limited supply that helps to make Kopi Luwak the worlds most expensive coffee.
